Food Conservation Tip - Reusing Leftover Marinade

It seems like an awful waste to discard that flavorful marinade mixture when preparing a meal. Don't be tempted to reuse leftover marinade without taking a simple step first. During the contact with raw foods, the marinade will pick up harmful bacteria that could make you ill. To conserve your marinade is really quite simple. You can cook leftover marinade before using it to baste with or to add to a sauce. Just make sure you boil it for at least 5 minutes to destroy any harmful bacteria.

Remember, food should be marinated in a non-reactive container, one made of glass, porcelain, clay or stainless steel. Ziplock plastic food bags are great for marinating. Avoid aluminum and cast iron which can react with the acids in the marinade and possibly ruin your meal.

Use a shallow bowl so the marinade covers as much of the food as possible. Make sure you turn the food at least once every hour. Let your food marinate in the fridge, not on the kitchen counter, this will also help your food from becoming contaminated with harmful bacteria.
