Nothing like fresh eggs in the morning. I have Brahm chickens, a rooster and 6 laying hens. I get from 5 to 6 lovely, brown eggs from those hens every day throughout the year. The breed is noted for laying even in winter, so the girls are very busy ladies.
I usually use up all of the eggs for custards, puddings, bakery items and quiches. If I don't, I am swamped with eggs all through the year. I just purchased a incubator so will now start hatching out some chicks for future stock.
Yes, raising your own chickens is the only way to go if you are trying to be self-sufficient.
I love eggs also but I'm not inclined to pass up some chicken and dressing every once in a while. Brown eggs are better tasting in my opinion....no reason for it, just seem to have more flavor. Thanks.
