Nothing like fresh eggs in the morning. I have Brahm chickens, a rooster and 6 laying hens. I get from 5 to 6 lovely, brown eggs from those hens every day throughout the year. The breed is noted for laying even in winter, so the girls are very busy ladies.
I usually use up all of the eggs for custards, puddings, bakery items and quiches. If I don't, I am swamped with eggs all through the year. I just purchased a incubator so will now start hatching out some chicks for future stock.
Yes, raising your own chickens is the only way to go if you are trying to be self-sufficient.
I love eggs also but I'm not inclined to pass up some chicken and dressing every once in a while. Brown eggs are better tasting in my opinion....no reason for it, just seem to have more flavor. Thanks.
An expedient oxygen absorber for a 5 gallon storage container can be made by placing a golf ball size piece of steel wool and a tablespoon of salt inside a paper napkin and placing it in the container. The salt will absorb the residual moisture and the steel wool will naturally absorb the oxygen.

Make Your Own Electrolyte Beverage (Gatorade, Pedialyte, etc.)
To one quart of water add 1/2 teaspoon baking soda, 1 teaspoon of salt, and 8 teaspoons of granulated sugar. Thoroughly mix all ingredients together.
This will replace electrolytes lost by the body due to dehydration caused by diarrhea, vomiting, excessive sweating, etc. A package of Kool-Aid, Crystal Light, etc. may be added to enhance the flavor and color.
