Food Storage Recipes - Hoppin' John

Tired of the same old rice and beans? Try something a little different for tonight's menu! An old legend, among many, says a Southern land owner's one-legged slave, whose name happened to be John, hopped around the dinner table as he served a meal of rice and black-eyed peas. For a change of pace in your diet, make some Hoppin’ John for a tasty way to use rice from your food storage supplies. An added bonus is that black-eyed peas generally don’t require pre-soaking prior to cooking.

You can find more information about Hoppin’ John here:

You can find a couple of quick and simple recipes here:

Enjoy a change of pace in your meals or as John would say, " Hop to it! "

BTW, left-over Hoppin' John is known as "Skipping Jenny" and tastes just as good!

Staying above the water line!

There are a lot of variations - I like a little chopped celery in mine.
