). Okra is a good source of the vitamins C and A, also the B complex vitamins, and the minerals iron and calcium. It is very low in calories, a good source of dietary fiber, and is fat-free.
). Okra is a vegetable that can be stir-fried, boiled, micro-waved, steamed, baked, and grilled. It cooks in 3-6 minutes using most methods, approximately 10 minutes if cooked on the grill.
). Okra is a self-pollinating crop and the seeds can be saved from one year's garden for the next.
). Today okra is used commercially as a hidden ingredient: it is the mucilage in catsup that makes it so hard to get out of the bottle.
). The seeds from okra can be dried, then roasted, and finally ground to make a coffee substitute (this was done during the civil war in the South).
). Okra gumbo......accept no substitues! Gotta love it!!!!

Good for you! I think we should all devote a post or two to our favorite vegetable friends and list links to more info. Great way to learn new stuff.
